Anise hyssop, also known as fennel agastache, is an aromatic and bee-friendly perennial plant belonging to the Lamiaceae family. Native to North America, it grows naturally in meadows and sunny areas with well-drained soil.
It forms an upright clump that can reach 80 to 120 cm in height, with square stems and soft green, slightly downy leaves. When crushed, they release an aniseed fragrance reminiscent of fennel, anise, and licorice. Its abundant and prolonged summer flowering takes the form of spikes of bluish-purple flowers, which are very attractive to bees and butterflies.
Long used by several Indigenous peoples of North America, hyssop was an ingredient in herbal teas to relieve digestive and respiratory ailments. Even today, its leaves and flowers are used in infusions, in cooking (desserts, syrups, salads), or simply for their ornamental and ecological value.
