History and origin: Bergamot comes from the bergamot tree, a cross between the bitter orange and the lime (also called lime), mainly grown in Calabria (a region of Italy). The fruit resembles a small orange with greenish flesh and a smooth, thick skin that turns yellow when ripe. Its flesh is too acidic and bitter to be edible, so only the zest is used. Its white flowers are said to symbolize the Virgin Mary; and its fruits, her chastity. |
