History and Origin

Bay laurel natively grows as a shrub around the Mediterranean Sea. During Antiquity, laurel was the very symbol of victory and prestige. Associated to the divinity of the Greeks Apollo, Romans and Greeks used to crown their leaders and elite members with its leaves. The classic image of Jules Cesar is associated to laurel.

The use and reputation of laurel is well established, yet, today, its culinary use often offsets its therapeutic properties.

Herbalists used to advise laurel in cases of mild nervous disorders, atonic amenorrhea, chronic bronchitis and breakdown. As an herbal tea, it was also used to treat loss of appetite and atonic dyspepsia. Crushed leaves were applied to cure ulcers and disinfect wounds.

Uses

Culinary

Included in the bouquet garni, it is added to many types of dishes.

Environment

Laurel is used as an ornamental plant in Southern countries.

Perfumery

It is powerful and mild, warm and green. It blends well with basil, lavender, rosemary, ginger and citruses.

Hints

Good for colds:

Peel and mince 1 leek, 2 navets, 2 carrots, 1 celery branch, 2 garlic buds and 1 onion.

Cover with cold water in a pan and bring to boil.

Add a small chicken and let simmer for two hours.

Add salt and pepper when cooked.

Take out the chicken and separate flesh to cut it into pieces.

Spoon out the grease and put the meat back in.

Dilute one drop of laurel (pure) in a cup of broth and pour back into the mix.

Serve hot.

  • None known under physiological dosages.
  • It should be used moderately on the skin (potentially allergenic).
  • It is important not to confuse it with oleander, which is toxic.
