Mandarin cake

NOTE : In common recipes, we usually add grated citrus zest. Personnaly, I only use organic essential oil because fresh organic citrus are not available in my region. In this recipe, we can substitute mandarin essential with orange zest or lemon zest essential oil.

Ingredients:

  • 1/3 cup of vegetable fat
  • 1 cup of sugar
  • 2 eggs
  • 10 drops of mandarin EO (with lemon, 6 drop are enough) (alternative: marmalade blend : lemon, orange, grapefruit)
  • 1 cup of pastry flour
  • 1 tea spoon of baking soda
  • 1 tea spoon of baking powder
  • 1/2 cup of orange juice (or 2 table spoon of frozen juice concentrate)

Preparation :

  • Cream vegetable fat, add sugar, eggs and mandarin EO.
  • Mix dry ingredients in another bowl.
  • Put 1/3 of dry ingredients in the first bowl and mix.
  • Add half of the orange juice, mix well.
  • Add the rest of dry ingredients, stir well.
  • Add the other half of orange juice, mix well.
  • Pour into a greased and floured pan.
  • Bake at 375° F for 40 minutes
  • Icing : half honey-half soft butter flavoured with EO used for the cake.
