Preparation
- In a big pot, fry the merguez sausages in olive oil.
- Add the onion and fry some more.
- Add into the pot: tomato puree, carrots, chick peas, garam masala, brown sugar and salt. Simmer for about 10 minutes.
- Add the cauliflower. Simmer for about 5 more minutes.
- Add garlic, lemon, coriander and pepper.
- Adjust to taste.
- Serve on couscous and sprinkle with parsley.
You can add other vegetables and seasoning: zucchini, leek, pepper, black olives, etc.
