A hearty meal for cold evenings.



  1. In a big pot, fry the merguez sausages in olive oil.
  2. Add the onion and fry some more.
  3. Add into the pot: tomato puree, carrots, chick peas, garam masala, brown sugar and salt. Simmer for about 10 minutes.
  4. Add the cauliflower. Simmer for about 5 more minutes.
  5. Add garlic, lemon, coriander and pepper.
  6. Adjust to taste.
  7. Serve on couscous and sprinkle with parsley.

You can add other vegetables and seasoning: zucchini, leek, pepper, black olives, etc.
